Cajun Grits & Crab Cakes 


Cook 1 cup of grits in 3 cups of water, ¼ teaspoon of pink Himalayan salt and 1/4 Cajun seasoning. When grits have finished cooking, add in 2 tablespoons of Earth Balance Soy Free Butter and 1/4 teaspoon of pepper. Remove from heat, mix and let stand. Cook Sophie's Vegan Crab Cakes over a hot skillet with 1/2 cup of Avocado oil. Let fry for 5 minutes on each side and remove from heat to rest. Using the avocado oil from the crab cakes, add in 1/2 of a finely chopped sweet onion, 1 finely chopped orange bell pepper, 2 teaspoons of dried basil. Sauté then add in Kale. Cook until the kale is softened. Add 1 teaspoon of hot sauce to the grits and serve! ​

​Sesame Brown Rice Pad Thai Noodles

Cook brown rice noodles in boiling water as directed and add in 2 bay leaves and 1 tablespoon of sesame oil. In a skillet, sauté 1 cup of leeks, 1 shredded carrot, 1 chopped red bell pepper, 1 cup of spinach, 1 cup of brown clamshell mushrooms. Add in 1/2 teaspoon of organic tamari sauce, 1 tablespoon of sesame oil, 1 tablespoon of rice vinegar into the veggie mixture and reduce heat to let simmer. Drain noodles and keep a 1/2 cup of cooked noodle water. Add the noodle water in the veggie mixture along with 1/4 teaspoon of smoked cherry wood salt, ¼ teaspoon of ground black pepper, ¼ teaspoon of ground ginger and 2 tablespoons of sesame seeds.

Mango Sundae Smoothie Bowl

Using a high-speed blender add in 2 ripe bananas, 3 cups of frozen mangoes, 1 1/2 cups of almond milk and blend until creamy. Put mixture in a bowl and place in the freezer. In a saucepan add in 1 cup of Enjoy chocolate chunks (dairy-free, soy-free and gluten-free), 1/2 cup of coconut chocolate water and 2 tablespoons of soy-free Earth Balance. Stir together on high heat for 3 minutes. Remove from heat, stir and let stand for 3 minutes. Then, add in 1/4 teaspoon of Pink Himalayan salt to the fudge mixture and stir. Take smoothie bowl out of the freezer and pour fudge over smoothie bowl. Add in 2 tablespoons of chopped walnuts, 2 tablespoons of macadamia nuts and 1 tablespoon of Enjoy mini chocolate chips. Tastes so good you’ll forget that it’s loaded with protein, vitamin C, and potassium!
