Me-Me-Me So Corny (Crunch)!!!

Yes, you’ve guessed it, my veggie spotlight of the week goes to corn! I’ve had corn salad, corn soup, lots of Mexican food featuring corn on the side, etc all week. When I crave something, I usually look up the nutrients in it to see what it is that I’m lacking. 

You should know that even though corn has been engulfed in horrible publicity, it actually has health benefits! It’s full of carbohydrates (the good ones), so it will keep you full and satiated. I’m sure you are worried about burning off the carbs, but luckily corn contains a significant amount of pantothenic acid which aids in turning the corn carbs into fuel. When I look at the events from the week, I have definitely increased my caloric burn as I took a much needed visit to Crunch Fitness...that's probably why I'm craving all of this corn!

I had a 3-day free membership at Crunch and I finally took advantage of it. I shared with one of my good friends that when my life feels unstable, I don't like to work out. Honestly, that's when I should work out the most. You're only as stable as you feel and I'm ready to feel fantastic again! 

So, what fall resolutions are you making? You don't have to wait until New Year's to get it poppin'!

Eat corn.

I Miss My Kitchen!

I don't want to brag but, my kitchen at my old apartment looked...well...NOTHING like this! Ha! But this is my dream kitchen. It's purple and sparkly and looks more like a hip bar spot than a kitchen in a home. I'm not settled in here in cloudy northern California so I don't have my kitchen yet and I want it. I'm ready for it. I've mentally prepared countless meals in it!

The whole point is this: when I lived on my own, I prepared luscious vegan meals. I miss that. I don't want to eat out, I want to cook. I want to know how much sodium is in my food. I want to control my portion sizes and save some for later. I don't want to guess if something is vegan (only to find out later that it wasn't after sitting on the toilet for over an hour). I want to cook how I'm used to cooking and eat how I'm used to eating...without questions, judgement and on-lookers...oh the cost of being "Plus Sized and Plant Passionate." I don't "look" vegan, so I get stares. 

Lastly, I want to cook comfortably. I want to cook with my t-shirt and my panties on. I want the freedom of blasting Mary J. Blige when I'm cooking. 

That day is coming, but for right now, I'll just write, dream and drool. You don't mind do you?

Vegan In The Bay: Saturn Cafe

Ever wanted to live somewhere other than Earth? Welp, I'm thinking about moving to Saturn because THIS diner in Berkeley gave me all of the life! It all started on a sunny and fantastic Labor Day 2014 when I was simply starving after a sesh with one of my life-coaching clients. It was over, I was hungry, I needed a good option because I've visited other vegan restaurants and they've only been so-so. It was time for something DELICIOUS. 

So, I pulled up a seat at theeeee Saturn Cafe and ordered the BBQ pulled "chicken" sandwich! 

Life changing.

The BBQ sauce was sweet and zesty. The pulled soy "chicken" was charbroiled (and I love a good charbroil). The onions were fried. I was obsessed. 

While my steak fries could have been cooked longer, the service was great and it felt like home for me. I will go back soon (probably this week...okay...next week...let me pace myself) for the vegan peanut butter and chocolate milkshake. C;mon somebody!! 

Have all of my mail forwarded to Saturn because I'm moving.
