I wish that I understood even half of what veganism could do for your cholesterol, body composition, mental state, skin and sleep patterns in college. Surely, I would have been better off. I can’t cry over spilled almond milk at the age of 31 though. All I can do is share what I know now with those that are younger and wiser than I was then.

Eating a rich plant-based diet makes you glow from the inside out, so while all of those college girls are planning their lives around Cheetos, Top Ramen and Cookout (shout out to the colleges in NC), you can get your glow on college kid!

Check out these easy peasy recipes that you can snack on in the middle of the bed while watching whichever amazingly useless TV show that soothes your underage drinking soul.  

1. Three Layer Hummus

Hummus is life changing. Toss it in your mini fridge and you've got a vegan spread full of fiber and protein. It's chick peas people, ground chickpeas....and it's delicious!! Put it on organic baby carrots, celery, crackers, etc. etc. etc. 

2. Good Ol Fruit!

It never goes out of style. Make an easy breakfast by purchasing a tub of strawberries and eating them in bed. Nope, the sugar won't kill you - it's natural sugar. Nope, you won't get fat because of the sugar. Fruit is from the earth, it's fool proof - tried and true! Enjoy it while boosting your Vitamin C (collagen producing vitamin. Read: no wrinkles when you are 35). 

3. Dates and Greens

Not those dates, although I hope you are completely living your life as a co-ed. 

You may think that it sounds suspect, but this breakfast option is filling and it's a great way to wake up for your 8 o'clock class (you know, the one that you are dreading this semester). People don't typically think of collard greens as a breakfast food, but wrap your coconut rolled dates (or pitted dates) in collard greens and drink a cup of tea with it. Oooh yeah, see what I mean? Who needs a sugary cereal when you've got natural sugars to give you a boost?

4. Seaweed Snacks, Cherry Tomatoes and Mango Slices

Perhaps this is another head scratcher for you, but please believe that when you mix sweet (mango), salty (seaweed snacks) and tart (cherry tomatoes), you are in for a treat that will kill your hunger and help you to withstand the wait for the caf to open. Don't believe me, just watch!

5. Granola Cereal, Almond Milk and Blueberries

Antioxidants, Fiber, Yumminess. It's just too easy to eat better! You can do this. . .even in college. 

6. Bananas, Almonds, Coconut Water

Self explanatory. Even the girl on the top of the pyramid (or the one throwing it up) can do this! What a quick on-the-go snack! 

7. Bananas, Peanut Butter and Raisins

Don't like excess carbs? Fine! Take the granola out of the equation and rock out on sweet dried fruit with filling protein-packed peanut butter. Don't forget your water to wash it down with. 

Or vodka...whatever. . .
